The process – Compare

This is why you take notes. Compare your sensations and judgments of the item under observation to other things you’ve tasted. Do you see other items that have similar qualities or even contrary qualities that might make a nice juxtaposition?

Add your thoughts about the comparisons that occur to you in the notes about the liquid for future reference.

You should really examine whatever goes into your mouth. The tasting steps, when followed rigorously, will allow you to gather a database, both physical and in your memory, of the tastes and sensations for many liquids that will assist you in your endeavors of creating drinkable concoctions of infinite variety. Don’t assume that a liquid you’ve tasted every day of your life is well known to you. Familiarity breeds contempt; taste things you drink normally with a new focus.

So what if someone notices you taking notes while you taste something in a restaurant, maybe they’ll think you’re a food critic and give you better service or a free drink.
